Cobbler

Ingredients

  • 1 jar Chicken Tonight Country French
  • 1 tbsp Vegetable Oil
  • 450g Chicken Breast – cut into bite sized pieces
  • For the cobbler
  • 225g self-raising flour
  • ½ tsp salt
  • 45g butter
  • 120ml semi skimmed milk
  • 1 egg beaten to glaze

Method

  1. Preheat the oven to 200°C/400°F/180°C Fan Oven/Gas Mark 6.
  2. Heat the vegetable oil in a large frying pan and gently fry the chicken until golden brown.
  3. Place in an oven proof casserole dish and pour over the jar of Chicken Tonight Country French
  4. To make the cobbler:
    In a bowl, mix together the flour and salt, rub in the butter then add the milk and make into a soft dough. Gently roll out the dough on a floured surface to a 1/2” thickness and cut into rounds using a 6cm round cutter. Place these on top of the warm chicken mixture, brush with beaten egg and bake in the oven for 25-30 minutes until the cobbler is golden brown.
