Honey Mustard Pulled
Chicken with Coleslaw

Ingredients

  • 1 jar Chicken Tonight Honey & Mustard
  • 1 tbsp Vegetable Oil
  • 2 Large Chicken Breasts (approx. 500g)
  • For the coleslaw:
  • ½ a small white cabbage
  • ½ a small red cabbage
  • 2 carrots
  • 5 Spring Onions
  • 4 tbsp Mayonnaise
  • 2 tbsp freshly chopped parsley
  • Salt & Pepper to taste
  • Soft White Rolls to serve

Method

  1. Preheat the oven to 190°C/375°F/170°C Fan Oven/Gas Mark 5.
  2. Place the whole chicken breasts in an oven proof casserole dish. Pour over the Chicken Tonight Honey & Mustard sauce. Cover and cook in the oven for 2 hours.
  3. To make the coleslaw:
    Finely slice the cabbages and spring onions, grate the carrots and place in a large mixing bowl. Add the freshly chopped parsley and mayonnaise then mix together thoroughly with two forks. Season to taste. Refrigerate until ready to serve.
  4. Once the chicken is cooked, remove from the oven and carefully shred with two forks.
  5. Serve with the coleslaw in soft white rolls.
