Chicken, Leek &
Bacon Hot Pot

Serves 4

Ingredients

  • 1 jar of Chicken Tonight Leek & Bacon Sauce
  • 450g Chicken Breast – cut into bite sized pieces
  • 1 tbsp Vegetable Oil
  • 750g Potatoes, cut into 5mm/¼in slices
  • 15g / ½ oz Salted Butter
  • A sprinkle of Black Pepper
  • 50g Cheddar Cheese (optional)

Method

  1. Preheat the oven to 190°C/375°F/170°C Fan Oven/Gas Mark 5.
  2. Heat the vegetable oil in a large frying pan and gently fry the chicken until golden brown.
  3. Place in an oven proof casserole dish and pour over the jar of Chicken Tonight Leek & Bacon sauce.
  4. Arrange the sliced potatoes on top and dot the surface with the butter.
  5. Sprinkle with black pepper, cover with a lid and cook in the oven for one hour.
  6. Remove the lid and, if using, sprinkle with the cheddar cheese.
  7. Bake for a further 30 minutes uncovered.
