Spanish Chicken &
Chorizo Paella

Serves 4

Ingredients

  • 1 Jar of Chicken Tonight Spanish Chicken
  • 1 tbsp Olive Oil
  • 300g Paella Rice
  • 500ml Hot Chicken Stock
  • 2 Chicken Breast Fillets – cut into bite sized pieces
  • 100g Chorizo, sliced into 2mm slices
  • 200g Frozen Peas
  • 1 lemon and a handful of fresh chopped parsley to serve

Method

  1. Heat 1 tbsp olive oil in a large, deep frying pan over a medium heat.
  2. Add the chicken breast and brown all over, transfer to a plate.
  3. Add the chorizo sausage to the pan and fry gently for 2-3 minutes.
  4. Add the Paella Rice and stir gently to coat the rice in the oil.
  5. Add the hot chicken stock and the jar of Chicken Tonight Spanish Chicken, bring to the boil.
  6. Return the chicken to the pan and simmer for about 20 mins, stirring occasionally.
  7. Add the frozen peas to the pan for the last 2 minutes of cooking.
  8. Season well and serve with the 1 lemon, cut into wedges, and the fresh chopped parsley.
